Mocha Chip Banana Bread Recipe

Ingredients 

  • 1 ½ cups flour 
  • ¼ cup unsweetened cocoa powder 
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda 
  • ½ teaspoon salt 
  • 1 ½ cups mashed bananas (or three small bananas) 
  • ⅔ cup honey 
  • ¼ cup grapeseed oil 
  • ½ cup low fat buttermilk 
  • 1 large egg 
  • 1 ½ teaspoons vanilla extract 
  • 4 ounces Explorer Cold Brew Concentrate 
  • ½ cup semisweet chocolate chips (plus more for topping)

Method 

  • Preheat oven to 350 degrees 
  • Line a 9X5 inch pan with parchment paper and spray lightly with nonstick spray 
  • Add flour, cocoa powder, baking powder, baking soda, and salt in a large bowl and whisk altogether
  • In a medium-sized bowl, whisk together mashed bananas, honey, oil, buttermilk, egg, vanilla extract, and Explorer Cold Brew Concentrate 
  • Add wet ingredients into dry ingredients and fold until just combined 
  • Fold in chocolate chips 
  • Pour batter into pan and bake for 1 hour 
  • Cool for 15 minutes in pan 
  • Carefully lift bread from pan and let cool 
  • Slice and enjoy!
